I am the holiday cook but until I retired was doing only the main dish turkey, pulled pork and stuff. Well since flour yeast and water were at my disposal it only meant it was up to me to do the bread too.
I have been baking for a while but mostly loaf bread. Dinner rolls were a struggle to me and timing the dinner to the rolls friggin not going to happen.
Adjusted this and I'm getting applauds from all so I though I would share this one with all that cook food too.
2 cups milk, whole, 2%, instant dry, or what ever works in your cabinet but warm for the yeasties
2TBS bakers yeast or packet if you roll that way
2tsp salt
2 TBS Instant Instant Tater Flakes
1/4 cup sugar for the starving yeasties
2 eggs
1 stick .25 Lb butter I cut a bit off to save to rub on the finished rolls
6 cups All purpose flour and a little more for the countertop
I use a kitchen aid stand mixer for this one but I have doneit by hand and it a sticky bitch and you will be cusing me out till the gluten comes together its at least 10 mins in the stand mixer and only add no more than 1/4 cup more flour and it pulls off the bowl perfect.
Should weigh about 1660 g
I half it at this point and freeze it 830g. The rest rises for hr or till doubled. Punch down and divide into 12 rolls about 70 grams apiece give or take. pic shows 11 and a runt.
Preheat oven to 375 F and my pretty calibrated oven 13 mins and done perfect.
Hope you try it stays fresh and soft for days in plastic bag.

Thanks sbb I know you cook too, had the buns tonite with a porterhouse and some not local corn on the cob. I'm poke with a stick full.

I struggle with a basic roll, biscuits are easy. But put yeast in it?
