My panela and brown sugar light rum

recipe roughly as follows, i did it 3 times keeping notes to see what works best. as in 3 carboys. so this is kinda the gist of all 3
4 cones panela added to 1 gallon of boiling water until dissolved.

added 8lbs brown sugar bringing total volume to 1.87gallons, topped to 2 gallons

rack the still hot solution into 6 gal carboy, followed by 2 gallons hot water with 5tsp fermax into same carboy

added 2 more lbs sugar and water say ~.5 gallon

1.08 SG

temp was at 96F so i added 1/4 cup DADY, took off like a rocket.
the darker one i started tonight, and they were all that dark to start, the lighter 2 been working 2 days now
