I have been making this and all seem to like so let me know what you guys think.
4 to 5lbs of cracked corn
24oz of molasses
4.4lbs of Demerara sugar
2lbs of brown sugar
Water to make 6 gallons
30 raisins.
Any yeast, I used whiskey with glucose amylase.
Pour molasses in bucket, add sugars. Pour 120 degree water, 3 gallons, to dissolve sugar. Add corn amd raisins. Top off with cool water. Add yeast if temp is right.
Let ferment 5 to 7 days.
Run. I use a column with one copper mesh roll. Starts at 140 proof and dwindles. I start collecting around 110 proof. Results may vary, use your nose and taste.
Let sit two days for Angel's share.
When done use 2 gallons of backset instead of 120 degree water, scoop spent grains, and replace. Follow the rest of recipie.
