I was just reminded of an excellent corn bread recipe if anyone is looking for a simple, quick and delicious treat for their BBQ, try this:
Smoked corn bread
dry ingredients
1C flour (i use gluten free, works great)
1C corn meal (if you haven't fermented it yet)
1 heaping tablespoon brown sugar
1/4 teaspoon salt
wet ingredients
2eggs
1c plain yoghurt
3 tablespoons oil
Then:
1 1/2 teaspoons baking soda+1 tablespoon water
preheat smoker to "high" or 400ish *F
mix dry ingredients and wet separately.
when you are ready to bake it, mix the two together to create a thick batter.
then fold in the wet baking soda
immediately....
put into an oiled cast iron pan for a loaf, or make muffins (big or mini) it's done when they puff up and get golden brown on top (time varies based on size, maybe 20-25 mins for the loaf in a pan, 15-17 for muffins, 10-12 for minis)
this is lots for 6 people, scale accordingly.

That sounds good, I make a similar kind as a base, then add things I like: bacon with drippings, hot peppers, cheese, onions ... mmm.

I add some chopped onions in my corn bread.It adds a nice sweetness
