Has anyone tried making a mash over multiple days? Since rum mash is just molasses and water, I can quickly mix as much as I want. I've been fermenting it 30 gallons at a time in (clean) garbage cans. Since I use expensive yeast, I make a 5 gallon starter. If I wanted to scale up, I could just as easily make 300 gallons in a day.
Whisky mash is hard. I work in 10 gallon batches, and unless I have all my ducks in a row, I might only get 1 batch in a day. 30 gallons is a lot of work.
Could I make 10 gallons of wash on Saturday, and add yeast and have it happily fermenting, then add another 10 gallons more wash on Tuesday, then add a final 10 gallons the next Saturday? I’d need to be very careful with temperature, but don’t see why this wouldn’t work. And I wouldn’t need to make a starter.
Anyone have any experience trying this or hearing about someone trying it?
