I've never been a great brandy fan myself, but I am being converted, and so are the neighbors, even though the grapes that came with this property are not what I would have chosen for brandy.
I've planted some more suitable varieties.

You can always blend it back later.
I don't have a "heads one". It all goes into one container during or after the run, then into the aging jars with whatever wood, (and a jar of white because I like a bit of 'rough' sometimes
I find there is very little of what I would call heads in the bonne chauffe run, sometimes my generous foreshots on the broulis run have gotten rid of enough and the first sample off the spirit run has been put back into the jug.
You can always blend it back later.

An interesting and timely read.
I'm a novice grain distiller with no grape distilling knowledge.I've been offered some pinot noir thats not up to scratch for bottling & I was thinking of running it through the pot still for Brandy. Now I'm not sure how finished it is but I assume the yeasts been gassed.
If its not good enough for a brandy would it clean up enough in a 6 plate column to be worth recovering the ethanol?
