Breakfast cereal Polugar

Following on from my Polugar thread and my amylase thread I finally got around to starting my Odin inspired breakfast cereal Polugar.

I used the following ingredients :
2.160kg of weetabix style cereal
1.080kg of shredded wheat style cereal
1kg of 00 wheat flour
13g of Ritchies amylase

I poured 9l of boiling water onto the cereals and stirred well. This ended up a VERY stiff consistency! I wrapped the bucket well and left until it had cooled to 65°c then added the amylase and mixed in. It immediately loosened slightly making mixing easier. I stirred every 15 minutes for 90 minutes then added water to 25l and checked SG - this ended up at 1055 which considering this was an experiment with the amylase, I was very pleased. I pitched EC-1118 yeast and this morning it looked like this :
