Re: English Whiskey recipies
Mods can probably move this to the right forum for you, it's in the wrong category right now. As for English whiskey I know they stopped making single malt in England around 1900 but in recent years they are distilling again. I've never had or seen it or a recipe for such but I'd imagine search may turn something up, and I'd think it along the lines of alot of scotch but can't say for sure.

Moved the topic to Recipe Development believing someone will share a recipe that answers the question asked.

Re: English Whiskey recipies
most of the scotch whiskys I like are single malt.
so start there, make a mash with only malted grain, about 1kg of grain per 4l of water and I'm sure you'll get a nice drop.
change the bill as per you preference.

Re: English Whiskey recipies
1) Buy a field in England and plant it with barley, rye, or any other grain you feel is suitable for the whisky you wish to make. Build copper pot stills specifically for the style of English whisky you wish to make and install them in a distillery in England. Purchase new, or used, barrels suitable for the style of end product you want to make, then age the whisky in them in England.
2) Make neutral and check out what essences your local Home Brew Shop has.

Next you'll be telling us scotch should be distilled in Scotland, NZChris.NZChris wrote:...Buy a field in England and plant it with barley, rye, or any other grain you feel is suitable for the whisky you wish to make. And downton-hill, he's just messin' with you about the essences.
Don't ruin a good liquor with essences. Been there, done that, and will never do it again.

Swedish Pride gave you good advice, though. A single malt is an excellent start for what you're after.

Got this off the interweb:downton-hill wrote:Does anyone have a genuine English Whiskey recipe?
Now, try to brew them and see how you do. With the cereal adjuncts, I usually keep them at 15-25% of the grainbill. Otherwise, it’s all barley malt. Exact proportions will vary according to taste preference...this is where your experience will come into play. So, practice, practice, practice until you like what you make.Adnams Triple Malt Whisky
To many, the Adnams name is more familiar in the context of excellent craft beers, but in sunny Southwold on the Suffolk coast, their whisky distillery is also creating wonderful things. Their Triple Malt is aged in new American oak and combines wheat, barley and oats for an unbeatably smooth, creamy taste sensation.
Look out for bold, boisterous flavours of coconut and vanilla thanks to the barrels, whilst the palate provides a complex, luxurious taste profile featuring everything from honey and citrus fruits to some decadent chocolate notes.
Cotswolds Single Malt
This exciting single malt is the first whisky to come out of the Cotswolds Distillery, and its much-anticipated release did not disappoint. The distillery only uses Cotswolds barley, and showing the variety and farm where the barley was grown on each individual bottle is a lovely touch.
Aged for three years in premium Kentucky bourbon barrels and reconditioned American red wine casks, this whisky has a light, sweet nose delivering a delicious hit of butterscotch, marzipan and some peachy, fruity goodness. The palate is deeper, tantalising your taste buds with dark sugar and treacle alongside some intriguing dark fruits on the finish.

Re: English Whiskey recipies
Somehow aging an "English" whisky in American oak, feels wrong. Realistically it should be English grain also.
Unrealistically, and for best effect, you'll need to sing Jerusalem while you stir the mash with the true Excalibur.

Re: English Whiskey recipies
I am genuinely lolling here. Thanks for the interest.
I will stick with English grain etc, but a French or Spanish barrel I suspect as traditionally would be available. As for American oak, fine for a bourban or rye.
Thanks all

Re: English Whiskey recipies
Well, maybe your research has presented differently than mine...good enough. I say, “use what ya’ got”. It probably won’t make a lick of difference....except maybe cost.downton-hill wrote:...a French or Spanish barrel I suspect as traditionally would be available. Fact is...there’s bigger things to focus on than the source of the wood....like the mash process, grainbill, OG, distillation process, cuts, and of course barrel treatment.
It’s all up in the air...so have a blast. Have you sampled the world of English whiskys? Do you know what you like and don’t? Again, I say....EXPERIENCE matters most. Practice, practice, practice until you get it right.
Good luck. Be safe, responsible, and discrete. Enjoy.

Re: English Whiskey recipies
Would English oak not work for the ageing process I don't have English oak barrels but do have a few rather large blocks of it to break down into dominoes to age and jars?

This is the first time I've heard of English whiskey
Had to look it up on Wiki
It appears the only requirement for English whiskey is it must be made in England

English oak works just fine on whisky, it is quercus robar or Royal oak but in the modern coopering industry is known as limousine oak because the French planted so much of them in that place.

Re: English Whiskey recipies
Like the Scottish distilleries, most of the English distilleries use ex-bourbon barrels (or ex-sherry casks)... and a couple of them make amazing Whisky.
