Hi To all.
I have been reading the forum for some time and find it incredibly helpful. Learned heaps. Sorry to say that all I have so far is a good old T500, which feels quite amateur in this exalted company, but with a whole lot of attention to detail, plus a power controller, watching the top rather than bottom temp and concentrating on my cutting skills Im beginning to make a clean spirit. Once I managed to get neutral spirits I started with Limoncello using an Almafi recipe, very well received, progressed to Gin, experimenting with rum.

Realising the limitations of the T500 I am now thinking about the next step.

There's lots of happy T500 users here. We can't ALL start with Rolls-Royce equipment, so you know what you do?
Above all, be safe. Be knowledgeable. And make the best liquor you can. People have been doing this thing
successfully for hundreds of years under conditions that I'm sure sometimes would make a maggot barf, so realize
we're all wa-a-ay ahead of that, even with our most modest of modern equipment.
