Rye bread whiskey taste
So I made 2 60 liter washes and stripped them and then ran them through my 3" x 4 plate column and was pulling it off at 92%. There is a definite change from heads, hearts and tails but it tastes very unpleasant. I read about people it right off the still white, but no way I could do it. I didnt blend anything yet, just have cut jars and I am currently drinking a bottle of canadian rye. No way it tastes the same. Not sure the taste it should have but it doesnt taste like any rye I ever had. Anyone ever have this issue?

Rye bread whiskey, Odin's style, will not taste anywhere near canadian rye, or even a rye in my book..
It has it's own flavor.. canadian rye are a blend of multiple grains bill.. not an easy task to replicate the canadian rye.. I've tried for a couple of years, and just gave up on it..
The rye I've come to like is the grain bill used by tugboat.. it a fairly nice rye.. and there is one others that a nice rye taste is still-life rye..

I've never had canadian rye. But from what I've heard it's way less rye forward than american rye.
If it were me, I'd try some different cereals if you're still going the sugarhead route.
Think all bran and weetabix, maybe some cornflakes and just a slice of rye bread. Still cheap and easy, so no great loss if it's still not the flavour profile you're after.

Yeah I'll try something else. I guess I was expecting more of a canadian rye style whiskey. I'm not sure even charred oak would make something that I would like. I'd like to make something I can drink right away.

Raisin bran cereal makes a tasty drop and I use “jack Daniels” smoker chips to colour/age.
Also tasty as a white dawg, usually I water it down to 45% abv for consumption
A mix of raisin bran and cornflakes sounds interesting and will likely be my next effort.

Were you able to find the correct black German rye bread? Aldi's German pumpernickel produces a fine drop.

I checked my local Aldi a couple of times. Nothing resembling Rye or Pumpernickel.just sayin wrote: ↑Wed Feb 19, 2020 3:01 pm Were you able to find the correct black German rye bread? Aldi's German pumpernickel produces a fine drop.

Re: Rye bread whiskey taste
I met a gentlemen this past weekend that told me how to make a good rye whiskey in a certain way as to not make it taste burnt. Can’t remember what I have to do to the rye before hand, could someone inform me please?

Re: Rye bread whiskey taste
I made batches of Odin's Rye Bread, UJSSM and flaked barley (all sugar washes), strippped them separately then blended them Canadian-style in various proportions and did the spirit runs. The one I liked the most was 76% Rye Bread, with 16% UJSSM and 8% of the flaked Barley. I also made a sister blend with the UJSSM and Rye proportions swapped. I still like pouring them together and comparing them.StillerBoy wrote: ↑Sat Feb 15, 2020 6:44 pm Rye bread whiskey, Odin's style, will not taste anywhere near canadian rye, or even a rye in my book..

Agree with you that it is nothing like a true Rye. I bought a few popular ryes just to get an idea my taste preferences. Discovered I don't like high Rye mashbills.
