Gumballhead grain cap

34 lbs of barley squeezed almost dry but not sparged.
25 lbs cane sugar
15 gallons of water
8tsp dady
16 tsp fermax
2 oyster shells
Sg was 1.074
I haven't checked current because cap is in the way

I fermented on the grain
Should I wait for the cap to fall before racking?

I always wait until it falls. Also, I use a "wine thief" to dip down below the grain cap and pull out wash for testing sg.
You going to run this on Pot Still or Reflux? I run my gumballhead (from previous Scotch or Bourbon batch) on reflux but at a pretty fast takeoff rate- it locks in at 88-90 abv and holds the whole time. It makes a very nice vodka with grain flavors. Also, I don't bother with nutrients or oyster shells like I would with a straight sugar wash- the grain seems to keep everything in balance.
I am sure it is going to taste great!

Pot still, I plan on making 2 of these, striping into lowwines for a spirit run
I'm not a neutral drinker hoping to age and oak when complete
