Hello,
Probably a really stupid question but i've been reading a lot about the importance of keeping Mash ABV down. I understand why but not how. How do you stop a mash fermenting if i also want to wait for it to clear before stripping? - I dont have access to a large fridge or something like that to kill the yeast.

You keep it down by limiting the fermentable sugars. Be it by dilution or by careful planning of your grain bill

Also, don’t use more than 2 lb. sugar per gallon of water. In other words...don’t START a ferment with an OG greater than 1.075. Simple as that!
