Nice!
How small did you mill your corn, and how often did you stir your ferments?

Re: No Mash No sugar
My mill is in a locked down repair shop , so I used kibbled corn as it came in the bag. Quite a coarse crack compared to my usual, with a few kernels looking unbroken, so it's quite a good experiment.
SG is stuck on 998, but the refractive index is still rising. Not much rise since yesterday, 0.1% abv, but still some visible action. The method says 8-15 days and tomorrow is day 8 and it's looking like it might be ready to run.

This is fabulous stuff!
How long until this is a tried and true?
Can someone please post a direct link to the exact yeast/enzyme product that's being discussed here? Anyone have a US-based source from which to purchase this?

Spirit ran rice today.
The middle hearts had a beautiful rice smell, but it didn't translate into flavor when I tried to choose a cut. I'll try choosing a blend again tomorrow.

If the packaging doesn't say "Starter of liquor-making", it's a different Angel product.

There is another product they sell also called leaven, it doesn't have the enzymes and is used for some sort of dessert.
Found out the hard way... any one in oz who wants the dessert version let me know, have plenty... Sigh

Re: No Mash No sugar
It is the correct yeast. I would think that that corn might not have much left to give, I'd use new corn to ensure that you get enough out of it.

Re: No Mash No sugar
I ordered two of the 500g pouches of the angel yeast starter of liquor making. Looks like that’s enough for a good amount of runs. Probably go for some rice spirits and maybe some corn.
Cheers!

Re: No Mash No sugar
Round 2, 3 are getting underway now. I just purchased 2 new 5 gallon barrels, so time to get after it! #2 Corn, oats and some barley. I have corn and oats so I'm starting the first 2 of 4 ferments with them. One of each. I'm boiling water to pour on the grains this time to try and reduce the bacteria. #3 Will be when the first barrel is full, will be a variation of the Sundae Chocolate bourbon. I'll take some gravity readings and stir way more often this time.

Re: No Mash No sugar
I've never worked with oats before, way too thick to get clean sample to test for SG. In fact, they like to swell and float so much that they blew the lid off my 50 gallon fermenter and overflowed onto the ground! Happy yeast The tub is "50 gallons", and holds 35 gallons of normal AG ferments with plenty of headroom! I really need to upgrade to a couple Rubbermaid trashcans.
I only lost a couple cups, everything is going great so far. I've been stirring every couple hours. I got sidetracked today, the corn(crawling with weevils ) is all ground and will be getting boiling water tomorrow afternoon and hopefully pitching yeast before I go to bed.Ut Alii Vivant!!!!

Re: No Mash No sugar
Checked the SG just now: oats are 1.004 and covered in a pellicle, cracked corn is 1.002. Time to strip!

Re: No Mash No sugar
Almost done stripping the oats, I'm getting the expected amount of low wines so my efficiency has absolutely gone up from my previous time. Man, oats are a pain in the pickle to strain! Corn will be stripped tomorrow afternoon with 20% backset from these oats. Spirit run in a few days, no rush. I'm still waiting for my barley to get here for the next 2 ferments.

Stripping the second ferment, all cracked corn plus 20% backset added yesterday from the oats strip. Had a nice pellicle and smelled great!

K I'll bite, looks like I've got more fermenting to do this summer when it shows up.

Re: No Mash No sugar
I just ordered angel yeast for the third time on aliexpress.
Hope it comes through this time.
I did get a refund, but no explanation as to why it didn't ship.

Re: No Mash No sugar
I ordered 2x "Angel Yeast Wine Alcohol Yeast Active Dry Yeast Starter of Liquor-Making 500g" via amazon on 5/5 and delivery is scheduled for 7/1-7/28 so we'll see... Other items from china that I ordered via amazon in April are also still delayed but show as "shipped"...
Is this stuff converting all the starches in cracked corn or are folks seeing that a fine grind is converting more? A courser grind would be great even if it takes longer just for the squeezing aspects... How is the course grind spent grain after it's complete? Would a simple strain/sparge work well enough or are we still squeezing?
Cheers!

Re: No Mash No sugar
I run it through my grain mill to break it up some more, not really fine and had great success this time. I squeeze the grains through a paint strainer bag with my mop wringer.

Re: No Mash No sugar
Just about 6.5 gallons of low wines in about 4 1/2 hours including heatup. I didn't check starting gravity, but ended at 1.000 and I got the expected amount of low wines. I'll try to remember to take some samples next time.
I just ordered 2 more packs, said it should be here by 26JUN Ut Alii Vivant!!!!
Re: No Mash No sugar
I feel like this is an elaborate ruse to pull my leg or something, it sounds too good to be true. I did a little browsing, and I can't find much definitive on this stuff. Do we have a clue what is in it? Enzymes? Koji, the russian site says koji? Yeast, obviously. Nutes? IDK, room temperature fully converting enzymes seem newsworthy or something.
On Alibaba the minimum order is 1,000 kg, so somebody must be buying this stuff.
