3 1/2 Week Old Wash- UJSSM

Due to moving I haven't been able to run my UJSSM. This is the 4th gen if that matters. I checked and it has 12% potential abv. Is there any reason to not run this wash? Smells good, still has alcohol, and I hate to waste anything-especially alcohol.

This hobby really is not so much about making alcohol. But bottling opportunities to make memories with Friends and Family.

Bacteria, fungus wasn't sure if I needed to toss it and start over

Wash can sit for a long time if undisturbed, alcohol control and a co2 ensure nothing wild grows. Months, even years.

I ferment in the basement and when it's cold it can take 3 or 4 weeks.( Specially for gen 5 or 6). If it's doesn't smell or taste bad it's all good.

Try using less backset and they shouldn't slow to much as generations build. If you get it right you can go for many many generations..years in fact.
