Hello to everyone! I finally signed in. I have been reading a lot of the information the last couple of months, you guys have posted here. It is wonderful to see how helpful is the community. I've been amazed by distilling since I was a child, I didn't even drink a that point, but I liked those big copper tanks and all the great smell. I had the oportnity to visit some distilleries here, where they produce a chilean grape grandy called "Pisco". After studying biochemistry at the university I felt in love with distilling, but couldn't make it as I had to travel a lot for postgraduate studies and so on. Finally a couple of years ago it got stucked in my mind to distill apple fermented, or apple brandy...or calvados if you bring it to the extreme of exquisiteness. I started this year, finally, with a small 15 lts copper alambeic and have been a lot of fun learning a lot and making tests...screwing up, most of them, but that's the learning curve. I have a bunch of apple trees (around 4 acres), so I want to grow on that one...I know some of you find it the most complicated of the spirits...but I didn't know that part when I started.
I just want to say hi to everyone and thans for the pasts and future insights I'll find here.
