My New Raw Material To Produce Vodka

Hi

I live in a country where alcohol and liquor trade is banned and we have to make our own liquor. I prefer vodka and i think I am a professional in its production :D
The process is similar to other methods of making vodka but i use "Mazafati dates" that is our local fruit as raw material for fermentation. it is sweet and full of natural sugar. you can see it's picture here

I experienced many vodkas on foreign trips and i have to say my vodka has its own taste and characteristics and foreigners like it very much, especially the Russians :)
If anyone is interested, I can help them prepare this vodka.

I just want to start by saying "Thats Awesome!!!" Your post is a real testament to what this hobby is. Making something good, from a common local material. Its unique, and you like it, and I would bet we would all like your finished Product. Thanks for sharing

Please do share the recipe and describe the flavors. Dates are full of nutrition and I often use them in making yeast starter along with raisins. I also toss a handful of them in sugar washes.
Since what you described is made with fruit, it’ll be a brandy I guess.

Welcome to the forum.

I wouldn't be trying to make vodka from them if they were growing in my back yard. I'd start by trying to make a robustly flavoured brandy before resorting to stripping some, or all, of the flavours out.

I've done "vodka" with jackfruit before, although the fruit is heavy on flavor, the spirit doesn't have much (anything that I could feel) even with single pot distillation. If any of you can reach this fruit go for it.
