First UJSSM in an Airstill - confused about first gen low wines

Post by dustytrash »

I'm ready to distill my second gen in a few days, so I used the backset from the first, and kept my 'low wines'.

It's my understanding the low wines from the first are not from a sour mash, since no backset was used as it was the first generation.

So do I treat my low wines from the first gen the same as the second? Or should I mix them evenly in every spirit run distillation?

I was planning on doing a spirit run after my second gem fermentation is complete.
