Mixed up 2 batches of: 45lbs of evaporated cane juice with 30 gallons of water plus a bunch of boiled yeast and a couple teaspoons of epsom and Hornindal yeast.

I just put the lid on a 32 gallon Brute with 25 gallons of KSSF. I suspect I'll be busy all weekend next weekend Boilin', and squeezin' the booze out of all that wash. Its hotter that hell here this week, so that Brute should stay right around 85F all week in my garage with no help or insulation.

Collected and filtered a couple of gallons of storm caught rain water and sterilized it to keep it nice for proofing and making ice cubes and balls for our drinks.

Well the weekend has finally arrived. I'm shutting down my computer at work and going home to slave away in the shed. Ill start tonight by dropping a wort chiller into this 25 gallons of KSSF. Let it rest overnight to settle out, and get up early and run two strips, then get up Sunday and run the low wines and remaining squeezins from the fermenter.

Stripped 120 l of Teddys Fast Ferment Vodka.... gonna run it through my pot still today for a total of 5 distillations.....

Ran about 45L of 35ish % Shadys Sugar Shine low wines through the 3 inch Boka. Make cuts today and store it away for gin, apple pie and ouzo making.

Stripped 20 gallons, got 5.2 gallons of low wines, 3 pints of feints from my first batch, and 2.5 gallons of the remaining wash to run in the morning.

Almost made the second batch of peated single malt. After reconfiguring some things and adding some fittings, I ran out of tri clamps. Guess I'm rescheduling...

16kg of malted Barley in the 75L pot (35lb in 20 Gallon).
Managed to get the pot dry and the grains composted before the rain arrived.

With Blackberries now ripe making my version of Raspberry Chambord using Blackberries. Made this last year and my whole family loved it.

Oh man Bushman, you jogged my memory. When i lived in Seattle, blackberries were wild everywhere along the Burke-Gillman trail and Mathews beach. But you better have body armor cuz those spines were SHARP! Are you freezing then macerating? I use an immersion blender on rasberries rather than freezing.

Checked the FG on my evaporated cane juice ferments, less than zero. Bought propane to strip tommorrow. Dropped a section of piping and broke off a TC fitting :(

Mashed batch 2 of high rye bourbon.
10# corn meal
7# rye malt
3# 6 row barley malt
8 gallons water
Og 1.088
T-58 yeast

I mashed the malts at 120 while I was cooking the corn to try to break down the beta glucans to avoid scorching and maybe get some extra spice flavor out of it.

I've really gotta get set up for bigger mashes/ferments...

Also started a sugarhead from the first batches spent grains.

I left the grains hanging for like 3 days before I got around to using it.

Smelled pretty unpleasant until day three.

Puky, then sweet and fruity. Pretty cool.

I was planning on tossing it but got busy and it started smelling sort of pleasant before I tossed it so I decided to make the sugarhead out if it.

I guess we'll see what happens. If it sucks im only out $5 worth of sugar.

I made a blueberry maceration the other day and struggled with final product, was a little too sweet for me, couldn't get that right balance.
They just didnt have the sharpness of Raspberries that worked a treat a little while ago.
Taking a break while I get a new still completed....

2 quart fresh blackberries or 1-1/2 pounds frozen blackberries, thawed1 cup simple syrup
1/2 cup honey
2 cups vodka (40-50%)
1-1/4th cup Brandy 40%
Finely grated zest of 1/2 Orange
1/4th vanilla bean split

Directions
Muddle the berries,simple syrup, and honey.
Stir in the vodka, Brandy, orange zest, and vanilla bean

Seal the jar and put in a cool dark cabinet until the liquid smells and tastes strongly of blackberries, about 7 days.

Strain the mixture with a mesh strainer into a clean jar or bottle. Do not push on the solids to extract more liquid.

Seal and store in a cool dark place. I refrigerate it. Use within 1 year.

Thank you! Just a quick question, did you use your own brandy?
I've been eyeing off the 4l casks at Aldi with a view to trying to make my own brandy or even Grappa.

As long as the flavors are a match rather than a clash, pot stilled brandy and grappa and sugar washes made on the leftovers from making wine, brandy and grappa can be useful base spirits for a variety of drinks that you will often read should be made from highly rectified neutral spirits.
