Favourite white likker

Post by Clamsmasha »

What’s your favourite recipe for a daily drinker that is pleasant and smooth right off the still?

(well maybe with a day or two to calm down).

I’m finding my rum very tasty but a bit rough...

Cheers!

Narrow cut UJSSM. None of my last heart cut got oaked because i keep running out of white dog. Reran the feints and oaked that with some fast aging trickery.

My friends really like my HBB white. I prefer it aged.

Vodka made from Simple Syrup and yeast nutrients. Perfectly smooth, no bite, no flavor or odor. Great for adding fruits or most any flavoring methods. Good for adding natural oils, diluting with water, carbonating and served on ice.

Plum brandy is far and away my favorite white dog. Not as easy to keep in stock as grain based though.

Thank you all kindly.

I will eventually have to try all these recipes. Honey bear looks very nice to me.

I’m thinking my next will be wheat-oats-rye and I have angel starter yeast inbound. (Never mashed before, only done molasses)

Cheers!

My favorite so far is 50% barley malt, 30% wheat malt, 20% rye malt and a clean yeast at a lower temp. I've done both US05 and scottish ale yeast around 62F. It is delicious immediately after blending the cuts. I don't even bother putting it on oak.

My licorice root vodka by far, the last big batch I made 5 years ago and it just gets better with time. Only decanter a bottle at a time and let the rest age @90%.

Bryan, how do you make that?
Just put some licorice root in the finished vodka?

Yup. Same as always. I was tempted when I became a mod to make 2 small changes, but decided not to. Same recipe as posted is the one I still follow.

Basically just grind up 200 grams of dried licorice I get out of our vegepatch in my hand powered corona mill and add it to 5 litres of 40% neutral( TPW run over 4 plates and a 500ml packed section of SS scrubbers) and I also added some cinnamon, black pepper, allspice and one star of anise. Everything goes thru the corona mill and after a good mixing with the neutral I cover it and give it a stir everyday for 3 days then I run using my 5 litre 2" SS pot still. Comes off around 85% and after airing for 2 days to let the angels have a drink I do the cuts.

One of my first arrays into making my own and still a close favourite although my brandies are starting to over take.

Cheers Bryan
