First rum

Post by Moggy »

I used a converted recipe for rum from that I scaled down the forum to attempt my first rum
The recipe below is what I used.
12,3 liter of Water = 12,3 liter
1,7 liter of Feed Molasses
2,5 Kg of Cane Sugar
10g of instant yeast heated up with the wash to kill it
60g of whet yeast added after the wash reached 30 degrees C
I must say that I am very happy with the end product
The still is a home made concoction.

Well done Moggy - my first rum completely converted me!

Congratulations! I hope you saved some dunder, it will make your next generations even better. If you have access to panela, then you might want to try using it instead of white sugar. Aging on used white oak makes a nice sipper.

Per a conversation I had with Mr. Jay Gibbs regarding white oak barrel staves: β€œβ€¦you gotta get it burning good.”

I don't know why he did the choice, but probably because white sugar is cheap and molasses has the flavor and nutrients

The Recipe called for Sugar and molasses.
The molasses I use is quite cheap at the equivalent of $10 per 25Kg.
I saved 5 liters of dunder, the smell changed to a slightly toasted aroma.
When does one add the dunder ?

That depends on what recipe you are using.... most add it to the next wash.

I am afraid there is not much chance of that happening.

I know that no mother has ever had an ugly child, but this rum is really good, I think.
I am having one bottle now and I will keep two for ageing.
We drink rum and coke in SA and it is really good with Coke.

Think of what it will take to save bottles for 3 years, 5 years, 10 years.

I really need to fix my stillin' shed.
I'm falling behind, only drinking store bought when I drink anything and that's either terrible or terribly expensive.
One exception, this weekend my oldest daughter gave us the bottle of Champagne they were given by their real estate agent on completion of the purchase of their new home.
That was a very good and very expensive bottle of bubbly!
I fed them Dungeoness crab, Halibut and Salmon I caught in August and we popped the cork on that wine.
Very nice dinner!!

Sounds good. One thing to point out, you said you used feed molasses. You need to be careful to use the unsulphured molasses, from memory feed molasses is sulphured.

Big ferments, three or four stripping runs worth, then a spirit run. Wide cuts for aging, narrow cuts for drinking young to keep your mitts off your aging stock.

Not all feed molasses comes in small pre packed containers with labels.
The stuff that I and many others use is decanted straight from large storage tanks/ containers .....into BYO containers.
No labels involved there.

This product called Voermol has an online PDS hosted by the suppliers.
