Recipes for backsweetening/Flavouring Navy Style rum
I have been searching this site and other sites on how to do this. There is very little out there that explains how to do this.
My goal has been to make a Navy style rum. (Lamb's Navy, Havana Club 7-year Black Label Other than this one is dry) I have played with some macerating in my white rum. And I've had some decent success And no I don't like spiced rum. My Maceration tinctures are just to put a little bit of flavour in the background (A little coffee star anise and a small piece of orange Zest..Which is very similar to my licorice love recipe)
I have also played with caramelizing sugar to back sweeten without success. (
I've been curious to see What everybody else on the form is doing For back sweetening/Flavouring.
What are some of the recipes that you are using for back sweetening/flavouring to make a Navy style rum? Something that I'm looking for is ingredients and methods.
I'm just trying to get all the recipes back sweetening/Flavouring and methods in one location on the site

Oh ps My attempt at caramelizing sugar ended up making a good batch of Toffee that wouldn't dissolve in my oaked rum

Break it up, throw it in, shake it once in a while. It will dissolve eventually.

I took white sugar up to 330F, cooled it for a few minutes, then added some boiling water. The next day it wasn't all dissolved so I heated it in a double boiler until it was. Let it cool and added some fast aged oaked rum to bring the abv up to 20%. It's about the consistency of molasses. It has to be used very sparingly.

Identify the flavors in the rum you want to emulate. I'm not a supertaster, so I search for reviews that describe the rum. Once you have a list, you can go about adding botanicals, or making essences. E.g., coffee, add a few whole freshly roasted beans. To make essences, I use rum spirit made from redistilled rum heads and tails. A mini pot still is a very handy tool.

To me "Navy" is a marketing style more than a rum style. It's kinda all over the place from sweet to dry, young to old, pot/column/blend. The only similarity really seems to be caramel coloring, which you can buy, and I don't think it has much flavor. It's more like food coloring, so we see black and taste black.
I think the most honest way to try to replicate it is the way most of it is made. Mostly either youngish rather clean rum from a reflux still or a slightly more flavorful reflux rum if going for that Demerara style, flavored with a funkier rum pot still rum, with dashes of a few other rums from some depth of flavor, oak it a little or a lot, hit it with caramel for color and sugar if that's your thing. Google rum hydrometer tests to find out how much sugar is in whatever commercial example you want to target, somethingfatrumpirate comes to mind, but they've tested hundreds of bottles.
Short of that? IDK, but I swear Pussers tastes like there's dunder in the bottle to me.

I make the caramelized sugar and it does end up thick. During the proofing/ dilution process I always hold back on some the water and mix in in the inverted sugar to cool it and thin it. The proof is spot on and the sugar mixes in without any issues.

The caramel colouring I have seen (and tasted) in bakeries is very bitter.
So even though you did not use much I suppose it would cut the sweetness/ add to the bitterness of the rum a bit.

I have about 12 different types of sugars. everything from Refined to unrefined sugar to organic to brown sugar panela (jaggery, and piloncillo)I'm going to see what caramelizing these different sugars to see what the different types of flavours that I can come up with. it could be a week or so by the time I'm done this one. we had a big snowstorm and the wife is working from home and she doesn't like it when I'm experimenting when she's around.She figures I make too much of a mess, NO that would never happen!

Good rum made from all Mollases shouldnt need back sweetening....or anything else added.
The only extra it should need is time with good oak.
The need for additives for any commercial rum shows a less than prime product that the manurfacturer is trying to rush to market.

In my research for rum that is sweetened and or back flavoured I came across this list from the Capn Jimbo's Rum Project.
I was surprised some rooms that I thought were dry we're actually not.. Without doing an actual account it looks like about 85% to 90% Roughly of rum is sweetened and or back flavoured. See if your favourite rum is on this list.

I was surprised some rooms that I thought were dry we're actually not.. Without doing an actual account it looks like about 85% to 90% Roughly of rum is sweetened and or back flavoured. See if your favourite rum is on this list.

Note: the following are rum sugar tests performed by ALKO, the Swedes and Johnny Drejer, as so noted. Compiling ALL tests into a single source will benefit all those trapped in the world of Rogue Rum. Caveat: I do not guarantee the accuracy of any test, nor my typing skills. The tests by ALKO and the Swedes can be considered very precise; those by Johnny Drejer are also quite accurate. Also included are hydro-based tests performed by Moi, Cyril, the Pirate, dawsonh, mamajuana and soon from rum lovers everywhere, as submitted for "The Great Sugar Test". Note: "Blowgunnerrecently submitted a bunch of good hydro tests in March of 2020, a big thanks! These latter are of course subject to error, so please point out any aberations which the testers will gladly repeat...
Special Note: the ALKO tests show two numbers, eg 1/3. The first is sugar, the second are "extractives" other than sugar. All other listings show sugar as a single value or as a range, eg "0" or "0-5". All numbers, eg "5" reference grams of sugar solids.
Late Breaking News: By request (mine) we are now including tests of Canadian Whisky, which by the regs may include up to 9.09% of what are called "flavouring spirits" (ANY other spirit, domestic or imported) and/or wine! If sugar solids are reported, these may be due by unlawful sugaring, or may reflect the sugar content of the flavouring spirits or sweet wines added. In any event the results indicate unexpected sugar solids.
Total Tests: 820! Look up your rum or Canadian Whiskey (bottom) and see if it's pure!

How did your testing turn out? I had the same question from your original post, so was curious to hear about your findings. And thanks for sharing the rum project, was very interesting. Although, I was a little confused as to the ratio of sugars. Meaning, if they found 25g of sugar solids, what was the overall volume? After reading this article I'm going to be doing some experimenting with backsweetening with different types of sugars. I have about 12 different types of sugars. everything from Refined to unrefined sugar to organic to brown sugar panela (jaggery, and piloncillo)I'm going to see what caramelizing these different sugars to see what the different types of flavours that I can come up with. it could be a week or so by the time I'm done this one. we had a big snowstorm and the wife is working from home and she doesn't like it when I'm experimenting when she's around.She figures I make too much of a mess, NO that would never happen!

1G @ 62% on used white & French oak w/12g of dark caramel* made from white cane sugar.
* 1/2 cup sugar in a stainless sauce pan over medium heat. Add a couple tablespoons water and 1/2 teaspoon lemon juice. Stir constantly until the sugar starts to give up tiny wisps of smoke. Remove sauce pan from heat immediately pour the sugar out on some heavy duty foil to cool.
