Amish friendship bread

My wife is in a Facebook group where people gift others random things she was gifted amish friendship bread starter I'm wondering if I can use it to start a ferment with

I have given it some thought with my sourdough bread starter. There is a lot of other bacteria in there. You go first. :evil:

How long can you keep a sourdough starter

If you feed it will last forever. I refrigerate it and once a week is good enough. I cook my bread a couple times a week. i'm retired so it's never gone more than a month.

All my grain ferments are started this way
My sourdough starter ferments out 6% abv no problem
Started it with rye flour
Gives a nice clean neutral
My starter ferments at cold temps
It will chug along at 65 degrees f
If you know its limitations
You can have alot of fun with wild yeast.
Experiment with it in small batches
It will work
its better to think like a fool but keep your mouth shut,then to open ur mouth and have it confirmed

That,s very interesting to me Duke. Could you give a bit of detail. I know most of the bacteria is lactobacillus. Do you add a pound to 5 gals or a pound to a 55 gal drum. They wilds are slow.

I start my starter a few days before brew day
Its gotta be erupting
2 lbs per gallon of water as usual
Once temps reach 80 degrees drop in about 500mls starter per 10 gallons
Thats what i use.
May work with less but thats what i use.
Airate
My last ferment went fro 1.055 to 1.010 in 2 days at 70 degree mash temp.
Its a grain ferment,but this will smell of vinegar.green apples towards the end
After cap falls let it burp for a couple days,then siphon off any clear
Dump the rest in the thumper and steam out the alcohol
A triple distillation really is my favorite.
Just did an all barley run 80 % whole barley
20 % malt
Turned out good
Did an all wheat before that.
Really good flavor..
The beer will be really really sour
Almost of vinegar
But thats what happens to it
Sippin on some know
Nice sweetness and slightly grainy
Very little bite at 100 proof

Oh yeah
You mentioned wilds are slow
All the ones i have used are of the contrary
Just do not go overboard
Stay at 5 to 6 percent abv
After 6 they sometimes can slow.
Wild yeast ferment wild sugars
Say for example apples
Usually apples contain enough sugar for 5% abv beer
So if you stay within that range they work well.
People say they dont work well but try to squeeze to much out of wilds
I have learned from this site to keep things under 8% adv for fermenting.
The product will be better.
Same with wilds
Stay in there range and they will give you some different and interesting products

I used natural yeast only for bread I don't know if it is suitable for fermentation. It usually develops more acidity than a classic yeast. If renewed at least once a week it will last forever (kept cool).

So if I was thinking about making a sourdough starter what would I store it in? A Mason jar a ziploc bag?

Makes great cinnamon rolls. Use or give away half of it once a week, then feed it some sugar & water. I had some made from potatoes years ago that was awesome.

Every starter is different.
I have made many and using rye flour is the easiest.
Rye seems to have alot of wilds on the grain???
In 2 or 3 days with rye you should have it rolling.
Using a refluxed barley vodka to make some lemoncello as of now
It gave me a very clean spirit with little bite at 45% abv
