Hi all,

I just made a smallish batch of this and I’m finding it very enjoyable.

1/3 each: Unmalted..

Triticale
Corn
Barley

For a 60lt wash 4kg of each grain milled very fine. Total 12kg.

Corn goes in first, use your preferred method of gelatinisation for the cursed kernel. I go for very long hot soak in an insulated vessel.
When that’s done I add the other grains and 90c water up to about halfway. I let the temp fall to about 70c then add enzymes. I mix with paint mixer regularly and keep the vessel closed. I let the temp fall by itself to 40 and pitch yeast. This can take >12 hours but it really does gelatinise and convert the starch nicely.

I strip pretty deep down to 10%.

After the spirit run I air cut jars for a day and blend fairly conservatively....I find the barley has a long skanky tail fraction so I don’t go very deep.

I put it on alligator charred American Oak and Cherry. Easy to drink early and excellent colour real quick. There is a mild rye spice and grassy thing from the triticale....I really like this grain!

I see Triticale as a blend of wheat & rye, which is right up my alley in taste profile.

Anyone find this in bulk in U.S.???
