And now we wait...

Many like to post about a first successful ferment (or first all grain mash), or first still built/bought or first good run of the still. Tell us about all of these great times here.
Pics are VERY welcome, we drool over pretty copper 8)

And now we wait...

20gr juniper and 10gr coriander and a tangerine skin in 1 liter of 50% ABV sugar wash. Gonna let it macerate for 24 hours, take out the tangerine, dillute to 30 or 40% (not sure yet) and run it 'on the botanicals' so to speak. Hopefully the final product will settle within 3 weeks, just in time for some family gatherings!

great minds lol
my first attempt at gin.
2 x approx 2.5l of 43%, started about 6 hours ago.
both with scaled up OEG as per recipe. (30gms juniper,7.6gms coriander,2.5 mandarins per bottle)
gin 1 - the heart of 'heart of hearts'
gin 2 heart of hearts
hopefully run it tomorrow in the boiler with the citrus in the gin basket.
pity the gin baskets i have didn't fit in the jar, i was thinking of putting the mandarin skins in the jar, already in the basket.
note to self - buy bigger jars. :)
it smells lovely already

Run went great! I am using a hot plate with 4 levels of heat to heat my still. I used the 3rd one and got a nice drip/stream (a bit more stream than drip) after 30 minutes. Had it running for 1.5 hours. I collected 10ml, then 500ml (started with 1.25L macerated wash) and then a few hundred ml's more. The 500ml cut is now in a jar waiting for december holidays to be ready and I just drank a blend of the first 10ml with some of the tails... Tasty stuff!

Looks good dude! I see you are getting your amounts right hehe. I only have a 30L fermentation bucket and a 10L still so getting enough hearts to work with was a bit of a pain... Filled the fermentation bucket with just 20L last time... Will get 30L going soon

Do you have a pic of the gin basket? Sounds interesting. Getting logistics right takes some time hehe. Let me know how it turns out! Cant wait to run another batch 8) its getting winter but that only means we got some time to get our recipes down before gin season starts!

i got one of these, not used it yet. (took 7 weeks to deliver, and another 7 weeks to deliver the missing parts lol)
it came with 2 x fine mesh S/S baskets, which i intend to only put the citrus in.
gin basket 4.jpg
so the plan was to macerate the citrus in the baskets, in the jar, to save me fishing then out and plonk them into the caddy (after draining)

i would like a smaller still for playing around with gin.
my boiler is 35l, so i'm wondering how 2.5l will go in there.
it has concealed elements and a power controller, so fingers crossed.

also, when did the gin season stop?, i must have missed that :)

Nice device you have there. Might be worth looking into when I upgrade to my 30L keg.
