This what I call DAD"S DISTILLED GIN ( I'M DAD )

1.9 Litres 86% spirit ( fill to 2 litres )

25g Juniper
3 cardamon pods
1/4 tsp bitter orange peel
2 tsp lime zest
1 tsp lemon zest
1/8 tsp nutmeg
1/4 fennel
1/2 tsp angelica root
1/4 tsp orris root
1 1/2 tbl spoon coriander
1 almond
3 black peppercorns
1 arm star anise
1 cm cinnamon
1/2 tsp licorice root

MORTAR & PESTLE

leave macerate for 3 days

dilute to 40% and redistill with botanicals in a cotton bag in the boiler

discard the first 10 mL
