New Years. What Did You Sip

I thought it might be fun to see what folks broke out of their cabinets to toast the new year with.

As a newbie, I am still finding my way. I sipped on a little 6th Generation UJ roughly 6 months old from very conservative cuts. Felt great to toast the new year with my own product.

Started the drinking part of the day with an Irish coffee with my Irish-American whiskey, then a cocktail or two made with UJSSM, topped off at midnight with a shot of root-beer whiskey with the wife.

Into my ujssm at 160 proof..? only 1 month old....cut appropriately with ice and Lemonade..

Started off with a Knob Creek Old Fashioned, then off to the local winery to meet with friends, split a bottle of wine with the wife, then back home for a couple more drinks. finished the night with some peach shine I had in the back of the fridge since september.
All of my spirits on oak are at an awkward stage aound 2.5 months, so not really enjoyable at all yet.

A few glasses of my home made, all grain dopplebock (8.3%ABV).

Turned out to be my dinner too....a "meal in a glass", plus my "nightcap" in a single pour. ;-}

The best I sipped on of mine, was a 3 year old "Lincoln county process" 100% malted wheat whiskey

We had some of my blue OEG and some of of my AG gumball white dog. Love the gin and the gumball wasn't too shabby either.

Do you have a certain recipe you would share? I just found out that I have a local malting plant and they do several kinds of barley and wheat and oats. So now I am very curious to try a wheat whisky over my corn whisky

I malted red winter wheat until it was 75% ish modified.
Heated it wet to 140ish and let it stew for a day.
Dried, windowed, ground and used enzymes during the 2lb/gal mashing for insurance.

Ferment @ 86'f, steam stripped, redistilled with with 6 bubble plates.
Poured the whisky through a SS tube filled with moderately charred and washed sugar maple.
Aged in a glass jug with toasted sugar maple and white oak sticks.

It amazing to me the variety, which should be obvious I suppose considering all the different things we make as individuals. But mostly It creates interest to go research new methods and rabbit holes. Good stuff.

Started with OEG followed by Laphroaig 10. Maybe a couple of tequila shots in the middle...
