Spent the day distilling and ended up with OEG with the addition of a little licorice root. Very nice!

Yesterday we made 30 gallons of a Dark Belgian Strong. We had an OG of 1.092
85 lbs. of grain and 10 # of homemade dark Belgian syrup and 14 Packets of Lallemand Abbye

I'm running some feints and stripped beer through a Turbo 500 to learn how to use the reflux still to produce something more neutral.

I made an omlet wiht home made pork sausage, fresh mushrooms, and smoked swiss for breakfast. Does that count?
Nothing really happening here so I wait on my yeasties to finish thier feasting.

Started the final mash for filling my first 5 gallon barrel.

I've got two more stripping runs and two more spirit runs to go and I should be ready to fill that sucker!

I've racked up a decent amount of fortified wines (Sherries/Ports/Madeira etc) through all my oak treatments, so I combined them all for a cleanup distillation.
One or more of them has been dosed with sugar and last night I noticed Ants were swarming the carboy.

I'm doing the stripping run in my little gin still and I'll do a spirit run after that. Hopefully will recover 1L of mild grape Eu de vie that can be used as a gin base.

Today I did cuts on a feints run I did a couple days ago. Kept the neutral cuts and threw out the rest. I collected 4l (after dilution to 50%) & threw out about 40% of the cuts. I think it was worth it. I shut the run down as soon as I detected anything that suggested tails were coming through. I think going forward, I will just use the last run's feints into the next batch. In my setup, it's just a pain to store the stuff along with everything else.

And I started another TFFV fermentation :-) .... We went through alot of Gin over the holidays.

Did an all feints reflux run (yesterday). Got 3+ gallons of high proof neutral off my first CCVM run. Happy with both the yield and the CCVM.

I'm finally getting back into distilling after a few years of only doing beer. I bought a house in 2018 and just never got around to working out a new setup till now.

In late November / early December I did two rounds of fermentation on a roughly 50/50 rye/barley mash. I say roughly because I would brew a batch of beer that was 67/33 barley/rye, then after I lautered and sparged for beer I added fresh barley, rye, and hot water until the tun was full. Added yeast to the tun the next day and fermented on the grain for ~2 days, then drained into buckets to allow the fine grain particles to settle. Then I left for a month visiting family.

This week I got the still set up, did a cleaning run, and stripped those two mashes. Took 3 runs in my brew kettle/boiler, ended up with ~6.5 liters around ~25%ABV. All rough numbers, I'm not particularly good about measuring anything exactly till the spirit run. Can't even measure OG when leaving on the grain anyway so what's the point.

I think I'll do that 1 or 2 more times to collect enough to do a spirit run. Haven't decided what oaking method I'll use and that may influence the final volume I'm aiming for. After that I think I wanna do a single malt batch.

Lots to re-learn as I get back into this!

Looks nice. I have about 1.75 gallons of it ageing on oak bones in the cupboard. It's getting closer, mines about 4 months old now. Nothing to do here right now as I wait for my bourbon mash to finish fermenting out.

This is a little over 3 months. I've got about 4.5gal 116 proof in a 1/6 keg on oak that I'm going to leave alone until 6mo.

Also I have 5.5 gal of Rye Bread in a barrel.

My 5G cask is full of single malt. Its going to be a long 12-18 months waiting on that one. I need to move it out to the shed and off my work bench so I don't have to look at it every day.

I'm so sorry for your loss. My son and his wife has it and the wife and I thought that we got it from them but the test was negative. The wife still feels run down and has a fever but all the test come back negative so back to the Dr I'm the morning.

Oatmeal stout, first AG beer. Done a little AG mashing for a whiskey but this is my first beer not from some form of extract. Smells really good already, here's hoping it ends up tasting as good.

Smoked cheese, using a method I haven't tried before.

There was dried Agave Americana in the smoker at the same time. I'm hoping to up the amount of smoke I've already infused into it before my next Mescal run.
