My house is up on a hill (two story daylight front) and my workspace is in the back of a two car garage, both cars and a motorcycle parked inside most of the time. I have a 7' x 9' work space separated with a curtain so I can open up the door while I work, and there is still a lot of open space in the rest of the garage. This is where I do my fermenting, brewing and distilling, and I'm just a short walk from our downstairs kitchen when I need. Only things left to make it perfect is finding an old vent hood, and actually straighten it up a bit, looks like a brewers hoard...
People say that I'm a bad influence. I say the world's already f#cked -- I'm just adding to it.

I spent most of my stilling life out under the trees or in a cave. First still was behind the barn (late 1970's?). Started building a "stillhouse/shop" a few years ago, just so I could quit going back into the mountains as much. (Age and old injuries catching up sux.) 20×40 and 20x40, L shaped bldg. With one wing being .one and 1 being the SOH's. Shes more crafty than me. Anyway, been working on it for awhile, it ain't done yet (about 75% there). And the kicker is that I ain't mashed in or made a drop in probably 4 to 5 years. So I still ain't cooked a drop inside a bldg. And probably wont until next year. But I dont owe anyone a dime for it, most of the work was done by me, and all the screwups are mine. All the good stuff is the wife's.

Simple Lil' Pot Still, no temp guage, no carbon, no scrubbers, nuthin' fancy. Sometimes use a thumper, sometimes don't.

As I sit here on my 5th Caesar, I’m thinking that’s a fine question, how much room do you need. I think the question should be how much do you want? I have a 2 story 30x30 garage, do I need all that space? Yes! For distilling? Well, probably not but I have the 114L still set up on a rolling stand and my still storage cabinet is on wheels too. I roll out my shopping cart with the welder in it, get my stilling stuff out and hide the shopping cart where the stilling stuff was under the steps. Today I ran about 60l of low wines and water and got 11.8 gallons (that’s Canadian gallons of 4.54 L per gallon not the US 3.89) of 43% neutral. After running and cleaning up I put the donkey(my aff road truck) in the garage to fix the front right axle I broke while pulling a 1/2 ton out of a lake.
Anyway, you can’t have too much room, the more room, the more cleaner/ organized the set up is. I also have the 57L in the laundry room which I normally run in the winter when I can run garden hoses. It’s 10x 14 and I’m out into the hallway because the pipe in pipe cooling tower is so long, scratchy that, I was going to say I could probably do it in that room but no I couldn’t, washer and dryer and water tank etc. Nope. And why would I? Why crowd yourself? Why jam yourself into a little spot to prove a point? Ever see them “little houses? Who in the hell in their right mind thinks they can live in a glorified trailer? A slide in camper is fine for the weekend but to live? Look at me, I can live with one face cloth and 4 socks...WHAT????

Numerous 57L kegs, some propane, one 220v electric with stilldragon controller. Keggle for all-Grain, two pot still tops for whisky, a 3" reflux with deflag for vodka. Coming up, a 4" perf plate column. Life is short, make whisky and drag race!

Goingbroke having everything on a rolling stand sounds a lot like my setup. My fermenting area is an insulated cabinet on wheels and my still sits on a rolling cart I built. Having it easy to roll around makes it easier to move it outside for draining and cleaning after the run.

I think I’m going to go one ton axels because of the crap I do. Buddy was in the lake because he was trying to follow me. Man controlled dams raise and lower the lake as required. It was out 100ft and I was playing in the sand, he tried and went to the frame. Broke my new 20,000# tow strap and stalled my 10,000# winch. Got it out with a second truck pulling.
Got home 4am this morning (different run) and am still a little tipsy.

My shady spot is 18 x 18. However it houses a full hobby scale woodworking shop and is the space in which almost all creative processes happen so it isn't "dedicated". Two 8 X 2 FT shelves hold the Kegs and MISC storage, a 44 gallon brute lives in the corner and the Turkey Burner lives under the table saw extension.
If in doubt leave it out.

We get inconvenient periods of high humidity here, so some of our cured meat is aged with our cheese in a temperature controlled ‘cave’. How, is a whole other subject and best researched on other forums.

Maybe Im reading too much into your reply but I wasnt asking him to give me a tutorial Chris. Mearly asking for a little background of the product. If I wanted to know how I could make it myself, Id have asked for a link to a reputable information source, or just googled it myself.
I've never ventured into dry curing whole muscle yet (other than making my own bacon), summer sausage, smoked fish and smoked, then aged cheeses is all Ive done. I've been thinking of what a tri tip would cure out like though, but havent gotten around to actually researching doing it.

I like smoking cheese... nothing much to do right now think I'm going to clean the still house up again my new parts come n today I think I'll use some covid money to buy my condenser but if that dosen't come through I'll just use my change I've got close to 200 just in silver

Being a small-time stove-top stiller, the kitchen works.
