Didn’t make it but am working out a new AG whiskey recipe that will be distilled through my new gin basket with botanicals including wormwood, two types of hops, and orange peels. I got the idea from a similar recipe that won a gold medal at the 2010 American Distillers Conference. I reduced the recipes proportions to a hobby level and am changing the grain bill by substituting one of the three grains with rye (mainly because I love rye and have it on hand).

I didn't have enough leftover Golden Promise (Thomas Fawcett) for a second brew, so I decided to add some Maris Otter (Bairds) to make up the shortfall. The grain tastes a more grassy than the GP.

Decanted my "Slow" Gin, macerated some blueberries with some OEG. Taste test tonight!

Also got busy on the weekend with Blueberry Jam and Lime marmalade!

was gonna make my first attempt of ujssmm had 10 pounds of flaked corn so i converted to 10 pounds flaked corn 10 pounds sugar and 7 gallons of water and split between two 5 gallon buckets using two packets of bread yeast
hoping to strip run this weekend. did not take a sg reading just watching bubbles to quit and hope for he best..

got a really easy recipe, it has a tart kick to it but believe it or not, all my nieces and nephews really like it which I find flattering.
Perfect on toast!

today i split the hearts of tuesdays rum pot mode spirit run into 3, and put on usa medium oak/usa heavy oak/french medium oak.
i also refluxed the feints from that run to get some very nice light rum for immediate drinking.
and spent some time working out how i'm going to introduce columbus hops into my next gin run.( in a glass lab scenario).
i ordered a 1/2" S/S bazooka that i can adapt to fit into the glass lab vapour path, can't wait to try it, the hops smell amazing.

Finally finished my chocolate bourbon run. It took 140#s of grain to get about 6 gallons of likker to fill my first 5 gallon barrel. My plan is to use the extra to top it off every so often.

Filled my barrel with water. The heads are both leaking so I applied generous amounts of bees wax and it's just barely dripping now. Hopefully it'll seal up soon so I can fill it up with chocolate bourbon!

My first baby should be joining us here in the real world soon so I'll be taking a break from work and hobbies for a little while but I'll be back!

It seems very early in the season for a harvest compared to where I am in NZ. You are very lucky. I get offered free grapes every year, but they are always unprotected and ravaged by birds and wasps faster than they ripen. :(

Mine are weeks away, but they are colouring up three weeks earlier than usual.

I asked .." what are you doing with the grapes" ....the answer was " the birds will get them in the next day or two..the rest will drop on the ground and stink............do you want them."
I didn't have to think for long about what to do in that situation.
Went to the local hardware store and bought two tubs ..cost $24 Au.......reckon Ill get that back in booze or better.

On Wednesday my 3 closest liquor loving friends drove an hour up into the mountains to help me with making the cuts on the AG Wheated Bourbon (WBN) I ran on Friday. 2 of them had helped me do this before the holidays on 2 previous batches (rum and malt whiskey) and really enjoyed it, so jumped at the chance to do it again. And the 3rd friend is building a still but has not yet made anything, so he was really excited to help with the cuts.

I had 21 8 oz jars and we used the standard process of starting in the middle and going toward each end until we hit a jar we didn't want to include. We sampled 6 thru 20, marking 7 thru 19 as keepers. Then I explained that I'd rather have quality than quantity, and I talked about how there was too much bite and fruitiness in 7 and 8, and that damn wet dog started showing up in jar 17, so I only included jars 9 thru 16. In the end I got a total of 60 oz @ 140p, 68 oz when diluted to 125p for aging. Jars 6,7,8,17,18,19 will go into the WBN feints jar to be included in the next WBN run.

Of course I would not allow them to just make these cuts and then leave, so we had to sample everything I've made so far (7 batches ranging from 1 to 4.5 months old). A few hours later, after all the ooohs and aaahs during the tasting, as they were getting ready to leave, they all asked when the next 'session' was happening. So I guess I'm going to have to make this a monthly event. It amazes me how good this stuff is after only a few months, and makes me realize how much better it will be 6 months from now.

Now I need to make something else so I'll have cuts to do next month!

Stripping my Golden Promise single malt. It sat a couple of days after finishing and a lacto infection was just getting going. Took a bit off the ABV, but it should make up for it with flavour.

So far, its the least foamy all grain I've ever stripped.

Been there done that. It's in a 5 gallon barrel for another 9 or 12 months 🙁

Cold crashing a wineos wash that's about it I'm giving its week in my cold still house(garage) I've noticed the longer it sits its clean as water. I've got my eye on some 32 pound growlers of lme at the hb shop 65 bucks a pop.i like the idea of a stir n go mash I've been leaning more to the lme for my ag. Less mess
