Apologies if this is the wrong sub-forum - this seems to be the closest, but this post may belong elsewhere.

I've been reading a lot of materials (books and otherwise) as part of trying to improve my distillation process. I'm a scientist by profession, so I have a real interest in some of the more technical aspects of distilling and was wondering if there was a good book (or other materials) that goes deep into a lot of the technical aspects. I am particularly interested in information on the chemistry which occurs during the boil, in the column, and during aging. I'm quite interested in these topics, but they have been poorly covered in most sources I've read to-date. The "average" source will say something like "a number of chemical reactions occur when the wash is boiled and during aging", but never says anything beyond that!

Suggest you try finding Artisan Spirit Magazine on line and try it......it has some very interesting write ups on alsorts of subjects.
Ive seen articles relevant to the subject you want in it a few times.......cant remember which issue or dates off hand.

Thanks everyone. Æther's suggestion was closest to what I was hoping to find, but it seems like a lot of this information isn't easily available. Makes you wonder where the authors who make claims about esterification/etc during distillation and in aging are getting their information.

Glad that helped. If you want more on esters and action of yeast, Brewing and Distilling Yeasts by Graham G Stewart is great.

Whisky Science - A Condensed Distillation by Gregory H Miller may be another good shout.

I quickly skimmed a few of those old books. They are something else - interesting insights into how it was done in the past. Looks like my reading list just got a whole lot longer!

Also greatly appreciate the gin link, as that's where a lot of my interests lie.
