My first Rum

After "my First Gin" here's my first rum...
Again, there're plenties of recipes in this great forum.
I'm trying a kind of hybrid between Buccaneer Bob's recipe and Pugi's recipe.
The ingredients:

molasses, 10.0 kg, brown sugar cane sugar: 9.0 kg.
Yeasts Bruggeman's (indeed, I was born in Belgium) instant baker's yeast: 150gr.

As I wrote earlier, I cannot find DAP down here.
First step, pour the molasses in a Ø 40 cm SS noodle soup pot and add about 19l of boiling water, use a SS paddle to mix it well.

I'm using two large pots Ø 30 cm

and Ø 28 cm to dilute the sugar. In one of the pots I add 1 L. of lees from a previous fermentation.

I pour the boiling water and sugar into the fermenter in order to sanitize it.
