dried green peas
has anyone tried to convert pea starch to sugar for fermentations? i have read a fair amount online but have not had anyone tell me how they did it. Similar to corn? i would think you could crack them, boil them, then put enzymes/malt barley in to convert.

Okay, but seriously, how much starch is in them peas? Ive never actually looked, but I see no reason you couldnt use either method, or koji, or Angel yeast.

I found this, FWIW
You'll get about 115 calories from 1/2 cup of split dried green peas, according to the U.S. Department of Agriculture. Right around 70 percent of the calories in dried peas – or about 21 grams for a 1/2-cup serving – come from carbohydrates. Although dried peas do contain a small amount of sugar, most of their carbohydrates are the complex variety that take longer to digest and contribute to long-term satiety. Protein accounts for almost 30 percent of the calories in dried peas, which equates to about 8 grams per 1/2 cup. Like other legumes, dried peas contain very little fat – a 1/2-cup serving has less than half a gram.

using the search on here looks like about 12 brix for peas, compared to 20 brix for grapes

Heck, that's not bad. I suppose it's worth a shot to see what it gives up. They've got a lot of the nutrients yeast like.

O agree i want to try. Just curious if anyone has a method or just try to do it like corn. Then starch test after adding malt

well i am going to try it. going to follow booners casual corn. use about 2 lbs or cracked green peas soak them overnight. use the liquid enzymes. see what my O.G. come out as once i get to test it this week i will post on update and the process success or failure.

well i tried it. soaked split peas. brought them to 190F ish. let sit at that temp for an hour or so. once temp was below 190F added Sebstar HTL. mixed. put lid on pot, covered with towel. once temps lowered to sub 150F added subamyl GL. let covered again and let temps decrease. took some liquid off the top and tested it with hydrometer. S.G. was about 1.02. so not much sugars. did starch test dark, not black so there was still starch in there. so i broke down some starches to sugars but not all of them. this could be a temp issue? not enough enzyme? etc.. will try again. this time with actual malt barley to see if that will do the trick.
any thoughts or ideas are more than welcome.

How much enzymes did you dose the peas with? Did you just try a small 2# batch in a gallon of water?

.36mL/lb yes a 2lb test batch. I did adjuat pH for enzymes
