Too hot for EC1118? AG ferment fail?
Recipe for AG
12 gallon boiling water
15 lb flaked corn added
After temp dropped to 153 added 4lb 6-row and 5lb malted red wheat, insulated and sat for 4 hours.
Time was running out for the night so I hydrated 3 packages of ec1118 and pitched it in at 105 F.
5 days later and haven’t had any signs of movement in my airlock on the 15 gallon Speidel fermenter. (I’ve been out of town for last 4 days and have had wife look at it for signs of life)
Soooo I’m thinking temp must have been too hot for the yeast ya?
I haven’t taken a reading yet as I just got home but will tomorrow.
Is this a lost ferment? Anything I can do to revive and restart?

You know the answer from your own question. Yes it was to hot 1118 is a cold fermenting yeast. If you re pitch 1118 at a cool temp it will probably take take off.

Did you check the OG?
Did you check how well conversion went?

First thing to do is forget about relying on an air lock bubbling to tell you if something is fermenting. Its the most unreliable method known......at least take the lid off....look and listen for activity on the surface of the wash.

It's impossible that fermentation hasn't started.
The buckets lid is leaking Co2, instead of blowing bubbles in the air lock.
And/Or the mash has already finished.

Ok good info. The lid on these buckets seals about as good as humanly possible. What would the downside be to pitching more yeast?

What would be the downside to checking specific gravity with a hydrometer?

I'd pop the lid off the bucket and have a look and taste

What would be the down side of looking inside the bucket as suggested........this doesnt have to be rocket science.

How old was your yeast?

Lallemand recommends rehydrating EC-1118 in water up to 104F. I highly doubt 105°F will kill it. It won't be happy, but it won't be dead.
Take a hydrometer reading and check where it's at. Airlock activity is not a measure of fermentation.
