Sugarhead after lacto?

Post by ROD01 »

Did a search but did not find an answer(honest I really did).
Would it be worth it to try a sugarhead off these grains after this lacto(hopefully) infection? The wash smells great, almost fruity. It was all grain oat, wheat and rye with 1/2 the 24 pounds of grains in 10 gallons home malted.
Fermented on the grain and 1 of the few times I did not boil after conversion(long time beer brewer) as consensus here is not necessary
Thoughts?

The infection is in advanced state, try to distill the faster possibile by removing the floating stuff on the surface.

Stripping it right now.
1) could not get past my brewing habits so could not bring myself to put sugar on that. That was only 7 days from yeast pitch(I used Angel)
2) checked supplies and was out of sugar!

Bleached fermenter and started another oats, wheat and rye mash !
Grains were cheap so no real loss on missing out on sugar head.
Thanks,

Ive done multi gen sugarheads after serious lacto, butryic, etc. Never an issue.

I have done a sugarhead after a lacto infection. Since you have such a large population of yeast, they seem to overpower the lacto.

This has been while doing a sour mash, so the lower initial pH gives the yeast an advantage.

The lacto infection will return, but not nearly as actively…

I agree. Add sugar and ferment - see what happens. Boiling in a still will kill it!

Thanks for the replies.
Too late for this run, but will try it the next time.
Latest mash wasn't boiled either so I am sure the infection will be back.
