Bushy did some leg work for you, I searched the forum on the google engine and typed I Angelica Gin and this popped up

I am currently infusing some lemon myrtle and would think no more than a gram per litre on the infusion
What rate of Juniper

Cheers for the link and tip on using lemon myrtle. Ive seen that list before so will use that for most of the ingredients on my list.Sporacle wrote: ↑Tue Aug 17, 2021 9:41 pmBushy did some leg work for you, I searched the forum on the google engine and typed I Angelica Gin and this popped up

I hadnt decided what rate of Juniper yet but Ive done 3 different gins so far. The first one was too juniper forward and the last was spot on so will probably be using that one.
The mango is probably the one I wasnt quite sure on how much to use and if I should use fresh mango flesh, mango skins with fruit or canned Alphonse mangos which I recently used in a mango sour beer I made and it came out awesome. Had a really strong mango flavour.
Im deciding if I should put a mesh bag of fresh mango into my 8 litres of 40% Neutral along with my other botanicals and just check it every few days and pull the mangos out once the flavour is there.
Re: Gin recipe botanical quantity advice.
I use hints on quantities from here, gin always comes out nice: https://www.lovebrewing.co.uk/guides/gi ... otanicals/
So I'd use the following quantities per litre for a base:
1 part juniper
1/2 part coriander
1/10 part angelica, mango, black pepper(?)
1/100 part grapefruit peels, green cardamom and vanilla
As for lemon myrtle and lemon aspen, I honestly don't know how strong these are. If they are strong, use 1/100, if not - use 1/10.
Also, you may want to use smaller amount of black pepper.

Re: Gin recipe botanical quantity advice.
I have Lemon Myrtle growing in the garden.....it's quite strong.....I'd use it sparingly, probably 1/100. I've never personally tried to use it in gin, preferring to use lime skin.
Re: Gin recipe botanical quantity advice.
I have used the peel of half a mango per liter several times, both dried and fresh. It might be a bit too much for some, but we liked it enough to keep using it. It might depend on the mango. If I get a really nice one, I use plenty. If it's too much, you can always dilute it by blending it with the next batch.
Re: Gin recipe botanical quantity advice.
Thanks guys for the tips and advice. ill follow what youve all said and see how it comes out. @NZChris..I will try the mango skin as per your recommendations and see how I go. Cheers
