Hello from Quebec, Canada
Hi there!
I'm a future distiller, located in Quebec. Sorry in advance, as english is my second language... Hopefully I will make myself understandable!
I want to go into the liquor world, as I tend to love very sweet liquors (fruit).
I have ordered a Chinese Pot still kit, but I plan to make myself one.
I do work on a food plant (egg processing) so I have access to a lot of stainless equipment, and I can tig weld pretty well.
My background is automation process, so I may have some good ideas to make my distill process easy and precise (hopefully!).
I already made my own wine on the past, so I have a certain base in the fermentation process.
I do have friends that cultivate grapes for wine making, so I may do some cognac or other derivated products in the future!
It looks like a nice world/community, thanks a lot in advance for all the knowledge shared!

1. Amazon 30L pot distiller
2. T-500 reflux column (good product but expensive)
3. Large 60L stock pot + 2" column
Now using 15.5gal KEG + 5500w electric + fully aircooled reflux condensor and product condenser.

Regarding to you signature, I can see that you already have lot of eperience with "cheap level entry" pot stills...
As I ordered a chinese one, what would you advice for my couples of firsts runs?
I plan to run Uncle Jessy Sour Mash as firsts Mash/runs to build a litle experience... Looks like low cost and efficient Mash to start on.
I want to make myself a Pot stil with the ability to put a c3in coloumn on it eventually. I will have PID heat controls, but I'm not sure about putting an immersed element inside the pot or by going with a under element (like an stovetop).
I'm still reading an looking videos about the subject, don't hesitate to link me some good readings / videos for beginners!

Cheapest is a used 50 L beer keg from kijiji with a water heater element installed on it. Then the stainless steel fittings can be bought from Equinox in Boisbriand.
In the end it will be cheaper than the chinese pot still.
