Hello everyone from Boise area Idaho! New to the forums, but have been studying and researching from this site for over a year. I have a 12 gal pot still and 5 gal thumper, which I have ran several corn whiskeys on. We have a small apple/peach/plum orchard, so I have recently ran my first batch of apple brandy that is aging on oak as we speak.

I spent a couple of days in your beautiful city a few years back. What a beautiful area!
Congrats on your setup, sounds like you've got a good foundation. Lots to learn, and you may be better served to start without the thumper. More complexity makes it harder to figure out what the variables are, and how to adjust them. YMMV.
