I recently got some angel yellow label yeast and picked up a 20kilo bag of nice short grain rice. Now Im a bit stumped as to how much to use. The brewers friend calculator has flaked rice in its list of grains, and it says that to get 12% abv I would need to put about 12kg of rice into 23L of water. That seems like a lot to me. In another thread I saw that NZChris used 1kg in 6L, and his turned out to be about 10%. In another I saw someone using 1kg/4L and we claimed also 10%.
Id like to make something that I could bottle up a few liters as wine, and then distill the rest. I did a bunch of searching, but most of the sake recipes are for the more traditional way of making it.
How much rice are you guys using per liter of water with the angel yeast, and what's your outcome?
