Airing out distillate
I put 2 gallons out I made a couple days ago to air out, I've heard about and been reading about it. Tried it my first time. I'm really impressed by results, i was scared to do it for multiple reasons but is really worth it. This is a big gain, my cider brandy's I made dont have near the bite now. I feel like doing more, as before I didn't like it, it was too damn cidery almost hot, that feature is gone now. Anyone that hasn't done this should practice it, im doing it for now on. It helps, air it out, then water down samples from every jar for nosing/tasting. It will give you a good idea of what you want in your final blend. Some people are good enough to cut right off the still. Unless I have run a recipe multiple times and have an idea what to expect I will set things aside to air out a while before blending.
Keep playing and trying new things, eventually you will get a system down that works for you. Even when you have your system down you will still make little tweaks on just about every run. Very dynamic hobby!

Angel share is negligible with just a coffee filter and rubber band. I have left glass open to breathe for over a year. I haven't had any regrets so far. Opinions vary but I enjoy it

I collect in half pints . Cover and air for 24 hours and then make cuts .

Ethyl acetate is one of the flavor compounds in apples and is very volatile, airing will help get rid of some if you have too much. Did you remove a foreshot from the stripping run? In a corn distillate I tried to heat slightly and then mix vigorously with the open container, then put a cotton gauze with elastic instead of the cap to limit evaporation and left a few days .. I repeated a couple of times, it looks like Soften the taste slightly.

Thank you for everyone's help and info, I really enjoy the information that I can potentially learn from all you. You guys are very educated. Hopefully I get there and better in my craft in time, you guys are truly the best I can learn from
