So, I have done a couple of generations of rum (Buccaneer Bobs Recipeish).
I only have 2x 25L fermentation buckets and a 25L still so I end up stripping 3 washes for each spirit run.
Anyway, I got carried away with Dunder and started adding more than was recommended, the wash’s started stalling (assuming due to PH), so i thought I’d try Oyster shells to sort the PH out as an experiment.
I found some crushed oyster shells from a pet shop, designed as a chicken supplement.
First attempt, and the wash just ended up tasted a bit rank, thought it had gone a little vinegary so ran it anyway just to see how it was and it had a weird flavour, didn’t want to ruin that generations spirit run so tossed it.
I didn’t add any more oyster shells, but when boiling up the yeast trub I realised there was a fair bit of shell still in there, didn’t think a lot of it, and split it into my next 2 wash’s.
Both have this same rank flavour, that I can only assume is due to the oyster shell, which makes sense.
My questions:
1. Is this normal?
2. Would the flavour die down after a stripping and spirit run? I know I could “run it and see” but that’s a lot of time and resource wasted!
My biggest fear is that I have no Dunder left so will be starting from scratch!
I had been collecting a couple of L from each stripping run in a big 40L bucket but chucked a load of shells in there too!
Any pearls, or kicks up the arse appreciated!!
