Hi. New here but not to distilling and brewing. I currently use an air spirits air still as I only drink a bit of spirits, though I also make mead and cider.
Welcome, you are set with the background in fermentation of grain and sugar. Do you also keep bees to provide the mead ingredients? Seems there is a certain convergence of mead, bee keeping, and distilling, might throw in cider and beer as well.
