Figs
So I have access to a big ole fig tree. After a little reading, I see that the glycemic index of figs is about 60.. not too shabby. I gets the idea I want to do a fig "brandy" (moonshine). I will have about 50-60 lb to work with so I will do some calcs and aim for an OG around 1.07. Was going to follow Tater's design when he did the peaches in the Fruit/Berries thread.
Debating on some champagne yeast for this fruit.
Has anyone done figs before and have any good tips?

With a lot of fruits you don't end up with much of the fruit flavour after distillation.
Might be worth trying maceration like in the panty dropper method.
Or if you truly want to use the fruit for distillation, keep back some for maceration.
Either in the result of the fig distillation, or in some vodka or neutral.
Try both just for fun...

I never did figs before, but that's a yeast I'd probably use. I just don't know how it would cause any harm.

I'd try D47 with figs.
If you search for Demy's fig brandy he also macerated the brandy after distillation with some whole figs that he roasted slightly along with some fruit wood for aging - I macerated some figs in some grape brandy and quite enjoyed it as well and the maceration sweetens it up a little. Lucky to have tree because figs are pricey here for distillation quantities!

I think this year I will use them for straight distillation with the biggest question of added sugar. Figs are still growing so I could easily dry a few fresh ones after the run for a maceration.

Anyone have any ideas what can be done with unripe figs, other than the compost heap?
Both our trees gave a good early crop this year and are now covered in 1" or so diameter unripe fruit, the nights are cooling and the leaves starting to yellow so they are done for this year. Often happens here in the UK, the second crop almost never gets the weather to ripen, would be nice to find a use for them.
