Cold Flocculation During Aging

Post by Bee »

I'm aging product in gallon jars with oak sticks out in an unheated shed. The weather just turned cold and I noticed flocculation in the jars.
Should I strain that out?
Will it go back into solution when the weather warms up?
Is it good/bad/indifferent?

How cold is the shed?

If you made cuts to get a flavour profile you are happy with I wouldn't consider it a bad thing.

It is possible to have fusil oils go into separation in the cold.

Probably more likely to happen when a pot still is used for making whisky.

It gets down to whatever the weather is, so the lower 20s F isn't unusual.
Pot stilled.

Should I filter? I cut it for aging, not drinking white. I expect to let it go 5+ years.

leave it to age. you can always freeze it and run it through a coffee filter after aging.

Sometimes even the tannins of the wood can interact and create flocculation, I would exploit the phenomenon and filter but I don't know your cuts, it could be positive or not.
