Good day from the French part of Canada (although my English is not too bad)

I have to confess, I'm late to join! Moonshining is not so popular in my region so I've been using this forum as a resource for quite a while! I've been distilling for more than 10 years now with all kinds of machines and recipes (my first was an old air-cooled water distiller from the 80's I found on craigslist ;).. I soon stepped up to kegs and columns and then had to try the T500 and learned to master it for Gin. Now I'm aiming to master rhum with a new still (my fifth over the years), then apple brandy, then whiski (maybe) !

Anyhow, thanks all for sharing so much insight and making this journey super interesting.

Bunch of people from Montreal and Ottawa around here. You are not alone ;-)
Shit I bought but shouldn't have :
1. Amazon 30L pot distiller
2. T-500 reflux column (good product but expensive)
3. Large 60L stock pot + 2" column

Now using 15.5gal KEG + 5500w electric + fully aircooled reflux condensor and product condenser.

Salut de la NÉ! Surprised to hear that moonshining is not popular up your way… I always imagined the woods of Québec full of modern-day coureurs des bois making moonshine from maple sap.🇨🇦

Moonshiners are all hiding in northern NB.
