Angel Blue with koji

Post by SGB »

Local shop has this for about $15 so I thought I might give it a try for Sake rather buy the koji seperatly. . I know it's says it's for soju, Baiju Ect, but yeast balls work just as well for that..

Website says it's for rice wine as well as distilled rice spirits ...maybe a sake shortcut?

Ummm, ingredients list and description says its just a yeast. There's no koji in the one linked? Last note in instructions
2, The fermentation cycle and raw material variety, granularity of raw material, amount of koji and fermentation temperature and other factors. General granularity of raw material, a large amount of fine wine, the fermentation period is short; on the contrary, the fermentation period should be longer.

This product was listed in this thread as Baijiu qu. I saw it on ebay for a good price but did not purchase.

I don't know if they phased this out and replace it with yellow Lable or if it's new, and phasing out the yellow
. It just showed up at the local shop last month so seems new? but its not on the angel web site . IDK what the difference is .

Both blue and yellow have rhizopus / koji, maybe the difference in flavor? maybe the same ? First time I've seen it

According to the website blue is the new yellow
I know angel has changed colors and their packaging before ( baking yeast sugar tolerant has gone from white to brown and now gold) ingredients look the same. I haven't tried the blue, I'm guessing it's the same just new packaging

What's the useby on those packets? The few pictures i could find on eb and ali, the use by dates on the blue packets are 5 years ago, so not new.
The EAN number in the listings come up as yellow label.
No English on the pack after including it on yellow label and other brewing and baking yeasts for many years now?
If it is current perhaps this one is meant for Chinese domestic market only? Different labelling rules?
