I’ve done two stripping runs, each about 4 gallons of wash in the t500. I now have half a gallon at 90 ABV/180 proof. If I proof it down to 40 ABV/80 proof, I’ll have one gallon of shine. Do I run one gallon of shine through the t500 again for the spirit run?

i'd keep fermenting and stripping till I had enough low wines to 3/4 fill the T500 boiler.
What wash are you using?
I will also suggest that you don't follow the instructions that comes with one of those stills.....or at least used to , the last time I looked.
You can't and won't make good booze by only taking a fores shot , keeping heads and then relying on the still to stop producing when the tails arrive........that's just marketing bullshit to make it seem simple so that you will buy the still.,
Ain't a still or ferment on this earth that won't make tails. You can find Kiwis novice guide to cuts at the bottom of every page.

The wash is Uncle Jesse’s 1/2 barrel Wheated whiskey. I had 18 gallons of wash but it only produced that little shine. I think there was too much grain. I followed the recipe but used milled corn instead of cracked corn. It was difficult to sparge it.
