Thanks Saltbush,

In that case I have note seen true cinnamon on sale in my local spice store. Damn, so I may have just ruined another small batch by adding cassia sticks and cassia powder (also branded cinnamon but the darker reddish colour), both of which are ingredients in equal proportion in Arto's recipe. Oh well, one could get used to being a permenant failure in this game...

The color of the sticks in the bag gives away that they are cassia. Cinnamon is more orange.

The powdered version I used was much sweeter smelling and sort of floral. Not sure the picture colour below reflects the real life colour perfectly.

The Cinnamon powder ibused smells different to the Cassia bark though which is much milder. Perhaps I got lucky or perhaps not, I better find the proper cinnamon somewhere as Cassia is at least labelled so it's true Cinnamon I need to source.

Saltbush's link seemed to say true Cinnamon was milder and sweeter, that matches the powder aroma.

Sorry I could not get back to you because I was away,

the cassia is in sticks form and is more darker I am attaching a photo of the cassia that I use

Tha cinnamon is usually is in powder form and as NZChris stated it is much paler.
