I made this gin recipe loosely adhering to the botanical list for ungava gin, however I decided to also add in some of the traditional gin botanicals as well.
The end result is something the louches like crazy, making it almost like drinking milk when poured over ice. Ive tweaked the recipe to what I like, so as a result most people ive given it too hate it. Anyways here is whats in it...
macerate:
7 litres of 40% abv vodka
6 cups lightly blitzed juniper
4 hand fulls of white pine needles(I just plucked right off the tree in my yard)
1 cup angelica root
-------wait 1 day--------
2/3 cups rose hips, cut in half
1 cup dried elder berry
1/2 cup cardamom
1/2 cup coriander
1 cup freeze dried cloud berry powder
2/3 cup Labrador tea
1 tbsp ground black pepper
-------distill next day------
I started collecting at 75C, and stopped at 89C when it started to get bitter
I'm not quite sure where I proofed it down to, but I added 1200ml of water.
The maceration times probably aren't too critical, this is just what worked with my work schedule.
