Breakfast Cornflkakes:

Many like to post about a first successful ferment (or first all grain mash), or first still built/bought or first good run of the still. Tell us about all of these great times here.
Pics are VERY welcome, we drool over pretty copper 8)

Breakfast Cornflkakes:

Post by Michelle F »

My first try 1# Cornflakes Breakfast cereal
5# sugar
1 3pk Fleischmann 's bread yeast.

Brought the flakes and 3gal spring water to 190° and let it cool to 140° and stirred in the sugar and the yeast activated it with warm water and some of the mash.

When it cooled to 90° I poured it all into a sterilized 7gal fermentation bucket and added 3 gal more water. I let it sit for 6 days at 70°.

Itt has been filtered and is in the still as we speak. First jar about to come off now... BRB

Mmm... sweet and potent... got almost a liter of distillate. Dripping steady

Right on, nice work. I have never used actual corn flakes cereal, but have read that many have. I don’t think you need to take the corn flakes up to 190 as they are already gelatinized. I always bought flaked maize from a home brew place. Ended up being cheaper, but probably would not have the same flavor as it isn’t toasted. Plus the minerals they add to the cereal helps the yeast. :)

Sounds great. As long as you're happy. That's what it's all about. Have fun and stay safe.

5# sugar in 6 gals of water is very lite. So your take will be low. The cornflakes will only add to flavor since there are no enzymes to convert the starches. Every run is a win.

Sounds good Michelle, I've got a couple of Odin's Cornflake on at the minute for a friend who wants to make bourbon, so I'm hoping for that sweet corn taste.

Good luck. I suspect it will taste drier than “sweet corn” because the cornflakes have been processed (rolled and baked) and that removes a lot of the sweetness from the ferment you’d get using real corn and mash brewing processes. The flakes will add a cereal grain flavor and your sugar wash contributes some residual sweetness to the spirit. But it won’t be the same as you’d get from an actual corn mash.

Here’s an idea: try making the cornflakes recipe using raisin bran cereal. The bran flakes make a great nutrient for the yeast and the raisins will contribute fermentable sugars and nutrients too. The product from this recipe deviation is different from the cornflakes standard and yet it is delicious too. Try it. (spoiler alert - all breakfast cereals are so expensive in the grocery store now, so plan wisely).

Hey thanks for the tip off SS!

I can't find raisin bran in the UK for decent money, but I can get this?
Screenshot_20230428-172242207.png
Whole Wheat (60%), Sultanas (25%), Wheat Bran [15%], Sugar, Malted Barley Extract, Salt, Vitamin and Mineral Mix [Niacin (B3), Iron, Pantothenic Acid (B5), Thiamin (B1), Riboflavin (B2), Vitamin B6, Folic Acid (B9), Vitamin B12]

How does that compare to what you are referring to in the US?

PS: Sorry for hijacking the thread Michelle!

Perfect for Rad’s All Bran recipe. It makes a very nice “neutral” spirit. Plus, you can age it on wood for a great tasting brown spirit. And if you wanted to add some crushed raisins, you could do that too.

I made a nice tasting whiskey with almond bran flakes with oat clusters (ala, granola) based on the all bran recipe. It was cheap cereal (closeout) at the grocery, so I bought a few boxes. Made for a nice “diversion” spirit. Experiment as you may, exploiting skills you’ve learned.

I have done probably 6 All Bran wash. And 3 with the raisin bran. All done like Rads recipe. Really eazy and ferment dry. Makes a good drop. If I had to pick between the two. I'd say for my taste. I prefer the raisin bran wash. Have fun and stay safe.

Ralston Cornflakes- pretty much just corn, sugar and B vitamins plus I added 16oz unsulfered mollassas
(I add some B vitamins as a rule anyway...) so...

I let it ferment 6 full days. I got thirsty.. lol

Out of a 5 gal mash, I got just shy of a full 1.75 liter Cuervo bottle and 2 full pints (400ml) of distillate.

Pretty darn sweet. I let it sit overnight with a couple used charred oak spirals. Got a bit of oakyness. I'm happy...

Some darn good corn sqeezens...!!!

Even the Mad Hatter likes it and he normally just drinks beer!

A couple days ago, before this last mash was ready to run my hubby brought me a bottle of Maker's Mark, one of my favorites. This morning, after I finished bottling this last run, I had the opportunity to compare my whiskey with MM...

Oh Lord, this is humbling... Blindfolded I would have chosen mine as MM...

MM or Waterford Reserve has been my choice recently... until now...

Mine's better... hehe

I used to do Rad’s All Bran recipe for a brown spirit, until I looked at all the additives in the All Bran. Now I just use processed bran sticks.

+1.
When you don’t have to worry about the profit margin, you can make better cuts. To me, Maker’s & Woodford taste incredibly “headsy”, now that I make my own whiskey. It’s hard to go back to some of the old favorites because of the paradigm shift.

I just started another Cornflakes mash. You see I was given a half a case of Ralston Cornflakes. LoL.

All I had to buy was sugar as I have bread yeast from my baking, which, by the way, has worked great for my last two mashes 8) I got nearly 12 pints from the last 5 gal run. Sure is cheaper than Makers Mark, Ten High or Evan Williams

What's really cool is I capped the fermenter two hours ago. It is furiously bubbling at full boil already!

Amazing...

Funny you should say you only have to buy sugar, I'm kind of in the opposite situation, as I'm sitting on gallons of honey so it's all the other stuff I have to buy!
Not complaining!

For some reason I'm finding the 2 bran washes that I've done so far, get a slightly slimy consistency during fermentation that the corn doesn't? Is that a known thing with wheat bran?

I have done a lot of rads All Bran recipe. And some with raisin bran. The raisin bran had an oily surface... If that's the rite description. I never noticed it with the all Bran. Wish I was sitting on gallons of Honey... Wanting to put some Mead up..
