How long did you have this sitting before the infection started. I have some SSS that has been sitting for like 3 weeks. Hasn't started infection yet. Need to strip it this week.

...and not being big on infection brewing, I am assuming from the moon-like appearance this is a lactobacillus infection?

Also curious about the orangish spot on the left side?

Nothing to worry about, even if it was distilling will kill it off.

Probably lacto, could be other mixed in as well. What does it smell like?

This one has been with me for a while. Chemically peach watermelons. Pretty much all comes out in the heads. I view it as a hedge against acetobacter.

7days old dunder I started over with my first rum dunder mix with feed dunder and inoculated with 2 different spores and I’m feeding fruits to it today.

The title is a classic. I was not thinking about fermentations at all - I admit! :)
